1 Peel eggplant and cut into cubes.
2 Cook in boiling salted water until tender (about 15-20 minutes).
3 Drain.
4 Mash eggplant.
5 Brown ground beef in 3 tablespoons margarine.
6 Add minced onion and chopped pepper.
7 Cook until vegetables are tender
8 Sir in mashed eggplant, cooked rice, salt and pepper.
9 Spoon into a 10 x 6 x 2 inch baking dish.
10 Saute matza farfel in remaining 2 tablespoons margarine.
11 Sprinkle over eggplant mixture.
12 Bake in moderate oven 375° F. for about 20 minutes.
YIELDS: 4-6 servings.
