INGREDIENTS: |
|
|
Matzo Meal Batter: |
|
|
- 1/3 cup honey
- 3/4 cup sugar
- 2 1/2 cups boiling water
- 3 tbs vegetable shortening
- 1 pound matzo meal
- 1 tsp salt
- 8 eggs
- Oil for frying

|
|
Filling: (Chremsels can be made with or
without the filling) |
|
|
- 1 pound cooked, mashed prunes
- 1/2 cup chopped nuts
- 1 lemon rind, grated
- 1/2 tsp cinnamon
|
|
|
DIRECTIONS: |
|
|
- In a saucepan, bring honey, sugar, water, shortening
and salt to a boil
- Place matzo meal in a large mixing bowl. Pour honey
mixture into matzo meal and stir.
- Cover the bowl and let cool for five minutes.
- Beat one egg at a time into cooled matzo meal
mixture. It should be the consistency of a meat loaf. If
it's not too stiff, add a little water.
- Form into 1 1/2-inch balls with moistened hands.

Filling: |
|
|
- Mix prunes, nuts, lemon rind and cinnamon.
- Press 1/2 tsp. of the prune filling into each ball
and reshape to cover the filling.
- Flatten into pancake.
- Drop into hot oil and fry lightly on both sides.
- Remove from pan and place on a towel to drain.

|
At this point chremsels can be frozen. When ready to use,
place on a greased baking dish. Drizzle with honey and bake
in a pre-heated oven at 350 degrees for 5 - 10 minutes or
until golden brown. Yields: 50 pancakes. |
