  KOSHER GREEK RECIPES  
 

GEORGE'S MEDITERRANEAN PENNE SALAD

 

INGREDIENTS:
  • 8 oz. penne rigate            "TAMMA"
  • 1 cup red and/or yellow cherry tomatoes, cut in half  (check for infestation)
  • 2/3 cup hummus   "WAKIM'S"
  • 1/2 cup chopped red onion   (check for infestation)
  • 1/3 cup black and/or green pitted Greek olives, cut in half  "KOSHER"
  • 1/4 cup crumbled feta cheese      "TYRAS-OLYMPUS"
  • 1/4 cup chopped fresh basil
  • 3 Tbs. fresh lemon juice   "PAROS-SIFNEOS"
  • 2 Tbs. olive oil   "UNION OF PETRINA"
  • 1 Tbs. capers, drained  "KOSHER"
  • 1/2 tsp each salt
  • 1/2 tsp ground black pepper  (check for infestation)
  • 2 Tbs. toasted pine nuts
INSTRUCTIONS:
  1. Prepare pasta according to package instructions.
  2. Rinse in cold water and drain well.
  3. Gently toss remaining ingredients except pine nuts with pasta.
  4. Refrigerate, cover, chill.
  5. Sprinkle with pine nuts.
 YIELDS:  4 servings
