  KOSHER GREEK RECIPES  
 

DIMITRI’S GREEK GREEN BEANS in TOMATO SALSA

INGREDIENTS:
  • 2 cups roughly chopped canned whole tomatoes  “D. NOMIKOS”
  • 1/2 cup extra-virgin olive oil              “ELEA”
  • 1 medium onion, chopped fine
  • 5 cloves of garlic, skins removed and sliced but not chopped
  • 2 tablespoons fresh dill, chopped fine  (check for infestation)
  • 1 pound fresh green beans, ends removed   (check for infestation)
  • 1 tablespoon sugar (optional)
  • Salt to taste
  • Pepper to taste
  • 1/2 cup crumbled feta cheese   “TYRAS-OLYMPUS”
INSTRUCTIONS:
    1. Heat a deep sauté pan and add oil.
    2. Add chopped onions and sauté until they become fragrant and translucent but do not burn.
    3. Then add tomatoes, garlic and dill.
    4. Let simmer for about 5 minutes.
    5. Add green beans, coat with the sauce, and simmer for about 10 to 15 minutes, or until they are crisp-tender.
    6. Taste tomato salsa and add sugar if necessary.
    7. Remove from heat.
    8. Add feta cheese and stir briefly to evenly coat beans.
    9. Serve warm or at room temperature.
YIELDS: 6 servings.
