MALKA’s BUŃUELOS DE
BACALAO / CODFISH FRITTERS
INGREDIENTS: |
· 250g Cod Fish
· 100g Flour,
sift (√ for infestation)
· 1 tsp. Baking
Powder
· 2 Eggs
· 1 Bay Leaf
· Pepper, to
taste
· 1 Garlic Clove
· 1 Onion, spring
· 1 Parsley,
sprig, fresh (√ for infestation)
· Oil for frying

1.
Bring water to a boil with bay leaf, some pepper and
a bit of oil.
2. When boiling, turn the
heat off and soak the codfish for ~ 10 minutes.
3. Cut the garlic, onion
and parsley into fine pieces (as fine as you
possibly can.)
4. Strain the codfish.
5. Cut it in fine pieces
(again, as fine as you possibly can.)
6. Mix the flour, baking powder and small amount of
salt (depending on how salty the cod was, don't even
add salt at all) with 3-4 Tbs.of water.
7. Add eggs.
8. Mix well.
9. Add the onion, garlic, parsley and codfish.
10. Mix well.
11. Set aside (in the
refrigerator) for minimum 30 minutes.
12. In a skillet, heat a large amount of oil and fry
small amounts of the fish dough until they are
golden brown.
13. Drain.
14. Let cool a bit on
some kitchen towel paper.
15. Enjoy while they are still warm.
16. Serve with duck
sauce, ketchup or hot sauce, etc.
