NEYYAPPAM - FRIED SWEET CAKES
A
recipe from India - The sweet cakes are usually eaten on
Hanukkah or the day before Yom Kippur. Of course, they can be
prepared any time during the year and served during the tea or
coffee hour. |
INGREDIENTS: |
- 2 cups water
- ½ cup sugar
- 1/8 teaspoon salt
- 1 cup white wheat flour
- 1 cup semolina (soojee)
- 1 tbsp sesame seeds
- 1 tbsp chopped almonds

- 1 tbsp chopped cashew nuts
- 1 tbsp chopped raisings
- 2 dates, chopped
- 2 apricots, chopped
- ½j tsp baking powder
- ¼ tsp ground cardamom
- oil for deep-frying

DIRECTIONS: |
- Mix the water, sugar and salt
together in a pan and bring to a boil. Remove from the heat and
cool until just warm.
- Add all the other ingredients
except the baking powder, cardamom and oil. Mix well and let
stand at room temperature, covered, overnight. The next day stir
in the baking powder and cardamom.
- Heat the oil in a skillet or wok
over moderate heat. Take 1 heaping tablespoon of the dough and
drop it into the oil. Fry it on all sides for about 4 minutes or
until well browned. Remove and drain on paper towels. Continue
with the batter until all are fried.

Serve warm
for breakfast or any other time. Makes 20 Cakes. |
