PANAYIOTIS'
STEWED CHICKEN with ZUCCHINI
INGREDIENTS: |

5lb chicken, cut
into serving pieces
-
1 lg. onion,
chopped
-
2 cups whole
tomatoes broken up “D NOMIKOS”
-
1/2 cup extra
virgin olive oil “ELEA OLIVE OIL”
-
1 tsp. dried sweet
basil
-
salt and pepper to
taste
-
1 lb small fresh
young zucchini washed and stemmed

INSTRUCTIONS: |
-
Heat olive
oil in a pot and sauté onion until
golden.
-
Add
chicken and brown.
-
Add
tomatoes, sweet basil, salt and pepper.
-
Bring to
simmer covered for about 1 hour, or
until chicken is almost tender.
-
Add
zucchini at last 25 minutes of estimated
cooking time and simmer covered until
chicken and zucchini are tender.
YIELDS:
6 servings.
