SHISH TAOUK - SPICED CHICKEN KEBABS WITH GARLIC TECHINA SAUCE |

|
INGREDIENTS: |
|
|
- 10 Garlic Cloves, mashed into a paste
- ½ cup Lemon Juice· ¼ cup Olive Oil
- 2 Tbs. Aleppo Pepper, ground
- 1
Tbs. Cumin, ground
- 1 Tbs. Coriander,
ground· ½ Tbs. Mint Leaves, dried
- Kosher Salt, to taste
- Black
Pepper, freshly ground, to taste
- 1
lb. Chicken Thighs, boneless, skinless, cut into 2" pieces
- 1 cup Techina, unflavored “KOSHER”·
10 Mint Leaves, fresh, finely chopped (√ for infestation)

INSTRUCTIONS: |
|
|
- Combine half the garlic, ⅓ cup lemon juice, 2 Tbs. oil, 1½
Tbs. Aleppo pepper, cumin, coriander, dried mint, salt, and
pepper in a bowl.
- Add chicken.
- Toss to coat.
- Chill for 2
hours.
- Build a medium-hot fire in
a charcoal grill.
- Skewer chicken
on about eight 10" wooden skewers.
- Grill, turning, until chicken is cooked through and slightly
charred ~ 10–12 minutes.
- n a bowl,
mix some techina, fresh mint, remaining garlic, juice, oil,
and Aleppo Pepper in a bowl.
- Serve
alongside skewers.
YIELDS: 4 servings.
