ADATTO’S EGGPLANT STEW (TURKEY)
| INGREDIENTS: |
• 1 medium peeled eggplant
• ¼ cups walnut oil “KP”
• 2 chopped onions
• 1 lb. stewing beef or lamb
• 1 lb. fresh, peeled tomatoes / foil-bag tomatoes
“D.NOMIKOS”
• 1 tsp. salt
• ½ tsp. pepper

| INSTRUCTIONS: |
1. Pre cook beef or lamb as in preparing a stew.
2. Fry onions in oil until golden brown.
3. Add diced tomatoes.
4. Cut egg plant into 1 inch cubes and add to mixture.
5. Cover and simmer for 15 minutes or until tender.
6. Add the vegetable mixture to the meat and simmer
together.
7. Serve.
YIELDS: 4-6 servings.
