APOSTOLOS’ SUPERB SALMON SALAD
INGREDIENTS: |
-
1 head romaine lettuce
(checked for
infestation)
-
4 cups salmon - grilled,
broiled or poached, chopped
-
1 15 oz. can chickpeas,
drained and rinsed
-
1 large cucumber, peeled,
deseeded & chopped
-
2 tomatoes, chopped
-
1 small green bell pepper,
chopped
-
1/2 cup scallion,
chopped (checked
for infestation)
-
4 eggs , hard-boiled,
chopped
-
1 cup feta
cheese, crumbled ”TERRA AEOLICA”
-
1/2 cup black olives,
chopped
-
1/4 cup fresh dill,
minced (checked for
infestation)
-
1/2 cup extra virgin olive
oil “TERRA AEOLICA”
-
6 Tbs. fresh lemon juice
-
Freshly ground black
pepper to taste
(checked for infestation)
-
Pita bread

INSTRUCTIONS: |
-
Wash and dry the lettuce
leaves and break them into smaller pieces.
-
Place the leaves on a
large platter.
-
Arrange the salmon,
chickpeas, cucumber, tomatoes green pepper, scallion,
eggs, feta cheese and black olives on top.
-
Sprinkle the salad with
the minced dill.
-
Mix the olive oil and
lemon juice and pour over the salad.
-
Season with pepper to
taste.
-
Serve with pita bread.
YIELDS:
4-6 servings.
