DEBBIE’S ROMAINE LETTUCE SALAD
with FETA-OLIVE DRESSING
INGREDIENTS: |
-
1-1/2 heads Romaine lettuce,
checked, washed and cut into pieces (check for
infestation)
-
1/4 cup artichoke hearts (check
for infestation) “KOSHER”
-
1/4 cup chopped cucumbers, seeds
removed but skin left on
-
1/2 cup kalamata olives, pitted
and sliced “KOSHER”
-
1/2 pint grape tomatoes, cut in
half (check for infestation)
-
2 teaspoons finely chopped
shallots (check for infestation)
-
3 tablespoons balsamic vinegar
“KOSHER”
-
3 tablespoons lemon-olive oil **
-
1/2 cup extra virgin olive oil
“TERRA AEOLICA”
-
Kosher salt and pepper
-
1/2 cup feta
cheese crumbled “TERRA AEOLICA”

INSTRUCTIONS: |
-
Place the lettuce, artichoke
hearts, cucumbers, 1/4 cup of the olives, and
tomatoes in a large mixing bowl.
-
In a blender, combine the
chopped shallots and balsamic vinegar.
-
With the blender running,
slowly add the lemon oil followed by the olive
oil. This will emulsify the dressing.

Add salt and pepper to taste.

Once the dressing has reached
a creamy consistency
-
Add the remaining olives and
1/4 cup of the feta cheese.
-
Slowly blend until
incorporated.
-
Toss the salad with the
dressing.
-
Garnish with the remaining
feta cheese.
CHEF’S NOTE: **Add
a bit of lemon juice to olive oil.
YIELDS:
6 servings.
