  KOSHER GREEK RECIPES  
 

ANTONIO'S OVEN-BAKED AUBERGINES AND GREEN PEPPERS (PARVE)
INGREDIENTS:
  • 2 1/4 lb. green peppers
  • 3 1/4 lb. aubergines (fairly large)
  • 2 1/4 lb. ripe tomatoes
  • 1 clove of garlic , finely chopped
  • 1/2 cup Olive oil  (+ as much as you need for frying)
  • 1 teaspoon sugar
  • Salt
  • Pepper
INSTRUCTIONS:
  1. Preheat oven to 390 degree F.
  2. Wash the peppers and remove seeds and stalks.
  3. Let them drain well and cut into pieces.
  4. Fry the peppers.
  5. Wash , peel and chop the aubergines in thin round pieces.
  6. Fry and let them drain in absorbent paper.
  7. Pour ½ cup olive oil in a small cooking pan and add the tomato to fry as well, as the salt, the pepper, garlic and sugar .
  8. Let the ingredients simmer for a while.
  9. Place the fried aubergines in a small baking pan.
  10. Spread the peppers on top and pour the tomato sauce (which you have cooked earlier) so that it is evenly distributed everywhere.
  11. Bake in 390 degree F oven for about 15 minutes.
  12. Allow to cool a little and serve.
 
YIELDS: 6 + servings.
